PROPOSAL
How can we make an active contribution as individuals to reduce the effects of climate change? Ruminant livestock (cattle, sheep, and goats) use two-thirds of global agricultural land and contribute roughly half of agriculture’s production-related emissions. Beef is the worst polluter. Bottom line, choosing chicken, pork or vegetables instead of beef, dramatically decreases your environmental footprint.
PROGRAM IN DEVELOPMENT
Inviting chefs, food scientists and journalists, meat industry pro’s, agriculture representatives – to share space and meals for a week. Conversations will cover conservation and nutrition – farm to table, zero K, vegetable vs. animal protein. All will share responsibility for purchasing, prepping, and cooking. New recipes will be designed. A concise set of dishes will be designed to be adopted in leading restaurants and catering menus.
